Sugar Free Lemon Gummies

I finally came across a low carb gummy recipe that turned out well when I made it.  I used these cute little heart shaped-silicone molds that I bought on Amazon along with this recipe.

In a nut shell, the recipe I followed went like this:

3 packets Knox unflavored gelatine
3 whole lemons, juiced (comes out to 1/2 cup)
40 drops of Liquid Pyure (stevia blend sweetener)

Whisk ingredients in saucepan over low heat until mixture loses its applesauce consistency.  Put molds on a cutting board or other sturdy flat board for easy transporting into the freezer.  Use small dropper (medicine dropper) to squeeze gelatin mixture into molds.  Freeze for 10-15 minutes, then pop the gummies out of the mold into an airtight container.  Store in the fridge.  Enjoy!
